So we will be getting a lot of greens of many kinds from the farm and once you wash and store fresh cut greens, they will last for weeks. They rarely have gone bad on me, I just pick off brown parts. So here is my method for washing and storing greens:
1. You will need a large bowl and several colanders:


2. Fill the bowl with cold water and add a batch of greens:

3. Rinse the greens with your hands or tongs and then drain them into a colander. Throw away the rinse water, rinse the bowl and refill with fresh water. Add back the greens and repeat the rinse process two more times or until the rinse water is fairly clean and free of any dirt.

4. Repeat the process until all the greens are well-rinsed and draining in the colanders.

5. It really is worth it to invest in a salad spinner to dry the greens, otherwise you can keep drying them in the colanders, just turn the leaves over every now and then. Or you can blot them in between paper towels. I use a salad spinner to dry mine.
6. There are two ways to store the greens. In a large container if you have a lot. Line the bottom with paper towels, add the greens and top with one more paper towel before closing the lid and putting it away in the fridge.

DeleteA word about kale: if you soak for several minutes in salt water, those green critters of exact matching colors hiding in the wrinkles will drop off to the bottom of the sink (or bowl).
