Another spinach recipe


Whenever I am at a loss for what to make when it seems I have nothing to cook, I turn to hash since I always have on hand, some potatoes, onion and/or shallots, some bacon and eggs; adding greens to this adds extra nutrition and flavor. You can use spinach, kale, arugula, swiss chard or a combination of whatever you have on hand. Another item I usually have is baked sweet potatoes; I bake them and store them in the fridge for a quick meal, a side, sweet potato pie and to use in hash along with regular potatoes. It adds a whole other dimension, you'll just have to try it.

First I cooked finely chopped bacon (just one or two slices, a little goes a long way) in a pan with a little bit of duck fat, then added thinly sliced shallots and garlic and sauteed them until they were nice and brown. For a vegetarian version just saute shallots and garlic in olive oil, butter or a combination of both.


I next added cubed, parboiled potatoes (red, yukon, anything works) and I peeled a baked sweet potato and mixed it in with salt and pepper.

Then I added chopped spinach, let it wilt covered and then gently folded into hash. If you use kale or swiss chard, you will want to saute it a little sooner with the shallots and garlic.

 

I served the hash topped with a fried egg, you can also top with poached egg. It makes a delicious, easy meal.
